Lactation Cookies

This recipe is from passed on from my friend Misty. The parts in red are the changes she made, and the notes at the bottom are hers as well. The original recipe came from Noel Trujillo.

1 cup butter (I used Earth Balance)
1 cup sugar
1 cup firmly packed brown sugar (only used 1/2 cup--cookies were plenty sweet enough!)
4 tablespoons water
2 tablespoons flax seed meal
2 eggs
1 teaspoon vanilla
2 cups flour (I used 1 cup ap flour & 1 cup ww pastry flour)
1 teaspoon baking soda
1 teaspoon salt
3 cups rolled oats
1 cup dark chocolate chips
2-4 tablespoons brewer's yeast (I used 4 TB)

Preheat oven to 350°.
Mix the flaxseed meal and water and let sit for 3-5 minutes.
Beat butter, sugar, and brown sugar well.
Add eggs and mix well.
Add flaxseed mix and vanilla, beat well.
Sift together flour, brewers yeast, baking soda, and salt.
Add dry ingredients to butter mix and incorporate well.
Fold in oats and chips.
Scoop onto baking sheet.
Bake for 12 minutes. (Took me 16...crunchier cookies, yum)
Let set for a couple minutes then remove from tray and put on cooling rack.
Yield: 5+ dozen cookies when made with a standard-size cookie scoop (I got 70 cookies!!)

I really LOVE these cookies, even when not pregnant/lactating. I found one type of Brewer's Yeast that has a ton of protein and iron in it, so I figured it couldn't hurt. I did reduce the sugar since 2 cups total sugar seemed a bit excessive (plus, I like the sweet/slightly savory taste of these). I have made them with 1 whole cup brown sugar + 1/2 cup evaporated cane sugar as well and it was just fine like that too. I bet the sugar content could go down even more or perhaps you could use a different type of sugar.

Lewis Labs makes a few different products that look almost exactly the same, so definitely read the label to make sure you're getting the correct stuff. Some of the other varieties from Lewis Labs have almost NO nutritional value! TWO tablespoons of this stuff has 16g protein and 30% iron, along with a bunch of other nutritional goodies. It doesn't taste bad to me at all (a little savory/earthy), unlike how terrible I hear the other brands can taste. I got mine at New Seasons, $17 for a 16 oz container BUT I'm sure there's a cheaper source out there.

I saw the title of this post before I read the content. My imagination ran wild. I wondered if it was about some new kind of breast pads or short little handy hints about breastfeeding. But actual things to eat? Never even occurred to me!
